CHRISTMAS SPICE CAKE
This beautifully spiced soft gingerbread cake brings the warm, festive flavours of Nordic Christmas to your table.
The addition of browned butter to the buttercream to the cake with its spicy richness, while zesty orange slices add a seasonal touch.erfect as a showstopping dessert or a festive centrepiece for the holidays!
1. PREHEAT OVEN & PREP TINS
Preheat the oven to 175°C (conventional) or 160°C (fan-forced). For a single-layer cake, line the bottom of one baking tin with parchment paper and grease the sides thoroughly.
For a layered cake, prepare two tins the same way.
2. WHIP BUTTER AND SUGAR
Beat 150g of butter with the sugar from bag a until light and creamy. Add three eggs one at a time, beating well after each egg. Stir in 225g of yoghurt and orange zest from one orange.
Then sift the dry ingredients from bag b into the batter. Gently fold everything together with a spatula until smooth.
3. BAKE CAKE
Pour the batter evenly into your baking tin(s). Bake on the lower rack for 40-45 minutes for a single tin or 20-30 minutes if using two tins. Check with a skewer; it should come out clean. Cool the cake(s) completely in the tin(s).
4. BUTTERCREAM
Buttercream: Brown the butter in a saucepan over medium heat until it turns golden and smells caramel-like. Transfer the browned butter to a bowl and let it cool completely in the fridge until solidified. Once solidified, bring the butter to room temperature. Beat the butter for 1 minute. Add the cream cheese and the icing sugar from bag c, then whip until smooth and creamy.
5. ASSEMBLE & DECORATE
For a layered cake, place one cake layer on your serving plate and spread half of the buttercream evenly over the top. Place the second layer on top and repeat with the remaining buttercream.
For a single-layer cake, simply spread the buttercream evenly over the top. Arrange thinly sliced oranges on the cake.
Optional: For a festive touch, tuck a few small sprigs of rosemary between the orange slices.
6. YOUR CAKE IS DONE!
