Swedish Dream Cookies (Drömmar) — Made with a Special Secret Ingredient: Baker's Ammonia. These traditional, buttery sugar cookies are an absolute delight, guaranteed to melt in your mouth.
Baker's ammonia, or ammonium carbonate, served as the primary leavening agent for bakers long before the advent of baking soda and baking powder. In the case of these cookies, baker's ammonia is not just a choice; it's essential. Nothing else will yield the same ethereal, airy, and melt-in-your-mouth texture. Using baking powder or soda simply won't capture the magical essence that makes these cookies truly special.
There is one drawback to using baker’s ammonia, and it’s right in the name. It smells very, very strongly of ammonia, and while baking the cookies, your kitchen might not be the most pleasant place. But don’t worry, this aroma vanishes entirely during baking, leaving no trace of it inthe finished cookies!

1. MIX THE BUTTER AND SUGAR
Cut the butter (150g) into cubes and stir it with the vanilla-infused sugar (bag a) until it is completely mixed. Be careful not to over-mix, as this can cause the cookies to spread too much during baking.

2. MAKE A DOUGH
Pour the vegetable oil into the butter and sugar mixture. Then, combine the contents of bag b (baker's ammonia) with bag c (wheat flour) and stir it into the mixture until it forms a dough.

3. ROLL THE COOKIES
Cover two trays with parchment paper. Roll the dough into a sausage shape, cut it in half, then continue halving each section until you have 24 equal pieces. Roll each piece into a ball and place them on an oven tray. Once all the pieces are rolled into balls, place the oven trays in the fridge and leave them there for 30 minutes.

4. BAKE
Preheat the oven to 150 degrees Celsius and bake the cookies for 20 minutes. It's crucial not to open the oven while baking, as this may cause the cookies to collapse. When they're done, turn off the oven, then carefully remove the cookies and allow them to cool completely on the oven tray.
